Ingredients
Berry mixture
- 3 cups mixed berries, fresh or frozen
- 1/2 cup light brown sugar divided
- 1/2 teaspoon salt divided
- 1 teaspoon vanilla extract
Crumble Topping
- 1 and 1/4 cups all purpose flour + 1 Tablespoon
- 1/4 cup rolled oats
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 6 Tablespoons (3/4 sticks) unsalted butter, melted and cooled to room temperature
Directions
For the berry mixture:
- In a large mixing bowl, combine berries, 1/4 cup light brown sugar, 1/4 teaspoon salt, and vanilla extract
- Set aside and let rest for 15 minutes
For the crumble topping:
- In a separate bowl, combine 1 and 1/4 cups flour, 1/4 cup rolled oats, 1/4 granulated sugar, the remaining light brown sugar (1/4 cup), 1/4 teaspoon cinnamon, and 1/4 teaspoon salt.
- Pour in the melted butter and combine until crumbly pieces form. You will have a variety of crumb sizes, this is good!
- Preheat oven to 350°F.
- Divide the berry mixture evenly amongst 3 mini cocottes or ceramic ramekins.
- Top each cocotte with the crumble until it is filled to the top.
- Place on a baking sheet and bake in oven for 20-25 minutes or until the juices start bubbling.
- Remove and let cool slightly before serving.
- Top with ice cream and mint (optional).
