Directions

For the berry mixture:

  1. In a large mixing bowl, combine berries, 1/4 cup light brown sugar, 1/4 teaspoon salt, and vanilla extract
  2. Set aside and let rest for 15 minutes

For the crumble topping:

  1. In a separate bowl, combine 1 and 1/4 cups flour, 1/4 cup rolled oats, 1/4 granulated sugar, the remaining light brown sugar (1/4 cup), 1/4 teaspoon cinnamon, and 1/4 teaspoon salt.
  2. Pour in the melted butter and combine until crumbly pieces form. You will have a variety of crumb sizes, this is good!
  3. Preheat oven to 350°F.
  4. Divide the berry mixture evenly amongst 3 mini cocottes or ceramic ramekins.
  5. Top each cocotte with the crumble until it is filled to the top.
  6. Place on a baking sheet and bake in oven for 20-25 minutes or until the juices start bubbling.
  7. Remove and let cool slightly before serving.
  8. Top with ice cream and mint (optional).
