Ingredients
- 2 and 3/4 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 and 1/4 cups granulated sugar
- 1 large egg plus 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
Directions
- Preheat oven to 450°F. Line a 9 x 13 inch baking pan with parchment paper, leaving enough overhang around the sides to easily lift out the baked dough.
- Whisk the flour, baking powder, and salt together in a medium bowl until combined. Set aside.
- In a large bowl, using a handheld mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 2 minutes.
- Add the granulated sugar and beat on medium-high speed until creamed, about 1 minute.
- Add the eggs, egg yolk, and vanilla extract, and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients and mix on low speed until combined. The dough will be thick.
- Press the dough evenly into the prepared baking pan. Bake for 20 to 22 minutes, or until the edges are lightly browned.
- Remove from the oven and allow the baked cookie dough to cool completely in the pan set on a wire rack. Once cool, remove from the pan by lifting the sides of the parchment paper.
